As Eid-ul-Azha is approaching, people are looking for new recipes for dishes to serve their guests or savour themselves.
Seekh Kabab is a delicacy which was introduced in our region by the Turks as ‘Shish Kebab’ which literally means roasted meat on a sword. Now, it has become a part of every Barbeque and even casual supper. Seekh Kebab is actually made of beef mixed with spices and marinated vegetables like onions, chillies, ginger and garlic and then the mixed meat batter is skewered and baked on coal.
To make Seekh Kebab, what you need is:
Ingredients:
-Beef boneless
-Garlic (cloves 14-15)
-Ginger
-Onion
-Green chilies
-Mint leaves
-Fresh coriander
-Garam masala powder 1 tsp
-Coriander seeds (roasted & crushed) 1 & ½ tbs
-Red chili crushed
-Cumin seeds (roasted & crushed) 1 & ½ tbs
-Salt (to taste)
-Red chilli powder (to taste)
-Cooking oil
Directions:
-Add beef cubes, garlic, ginger, onion, green chilies, mint, fresh coriander, garam masala powder, coriander seeds, red chili crushed, cumin seeds, salt, red chili powder in a bowl and mix well.
-Add the beef with spices in a mincing machine and mince until it is a fine mixture.
-In a bowl, add the minced mixture and oil and knead well for 4-5 minutes.
-Soak hands in water and take a small ball out of the mixture to make kebabs of equal sizes on skewer.
-When it is in the shape and it has set well on the skewer, place the spike on a barbeque grill filled with burning coal. Oil the kebabs lightly while they are being baked. Once they are golden brown and look tender, remove carefully with a cloth or tong in a plate.
Serve with Raita.
